There is a phenomenon that occurs with some, usually small amount of bags in transportation and storage. Packages start out soft to the touch and should stay soft like the vast majority of all other bags, but mysteriously become vacuum packed. In a flexible package, this creates a package that is hard to the touch. These hard packages, though maintaining consistent fresh-from-the-roaster flavor and odor can be perceived by the customer as defective. This phenomenon can be caused by several factors including coffee reabsorbing the gas it has given off. It can be helpful to educate customers regarding this.
